These carving tools are hand forged from special high carbon tool steel. This complicated and expensive process is the basis of the quality and durability for which the Grandi Liutai Italiani tools are known. The tools are hardened to RC61 and are mirror polished to facilitate subsequent sharpening and prevent rust.

 the overall length of each gouge is from 24 to 26 cm. The wider gouges are often used with mallets, and are stronger to withstand repeated blows. The octagonal white birch handles are sized according to the shape of the gouge, and are wrapped in metal rings to prevent cracking or breaking .
